Carrot Cake — Three Layers, Two Sizes, No Nuts

Carrot cake without the bits people pick out.

Most carrot cake has walnuts in it, and often raisins. Some has pineapple. If you've ever watched somebody quietly excavating a slice at a party, this is the cake for them — and for anybody with a nut allergy who has spent years being told carrot cake isn't for them.

Ours has no nuts and no raisins. Just carrot, spice and a cream cheese finish.

How it's built

• Three layers of spiced carrot cake — cinnamon, nutmeg and baking soda giving it the lift, and three cups of shredded carrot per batch doing the work of keeping it moist
• Vegetable oil, not butter — which is why a carrot cake stays tender for days where a butter cake firms up
• Brown sugar as well as white — for a little depth under the spice
• Vanilla cream cheese buttercream — tangy and rich, and the only frosting that makes sense on a carrot cake
• No nuts, no raisins, no pineapple

Two sizes

• 6 inch — $78 · feeds 6 to 8 ($9.75–$13.00 a head)
• 8 inch — $120 · feeds 10 to 15 ($8.00–$12.00 a head)

The 8-inch is the better value per person — 54% more money for 67 to 88% more cake. Around ten people, size up.

Why it's worth the price

• Three layers, filled and stacked by hand. Levelled, filled and frosted individually — an hour of somebody's afternoon, not a mix poured into a tin.
• Cream cheese buttercream. Costs more than plain buttercream and is less forgiving to work with, especially on a tall cake. It's also the only finish that belongs on this one.
• Real spice and real carrot. The flavor comes from cinnamon, nutmeg and three cups of shredded carrot — not from a carrot cake mix with a color in it.
• It keeps. Oil-based sponge and a set cream cheese frosting mean this cake is still good the next day, which most layer cakes aren't.
• No nuts. Stated plainly, because for some of your customers it's the difference between ordering a cake and not having one.
