Why two hours matters

This is one of the fastest things we make. Give us two hours' notice and your box is baked and ready — against twelve hours for muffins and three days for a cake.

That makes this the item you can actually decide on the day. A meeting that got moved, visitors arriving this afternoon, a breakfast you forgot to plan — this is the one you can still order.

• Staff rooms and morning trays — six covers a small team
• Cottage weekends and visitors — they hold up well overnight
• With the sandwich platter — croissants are one of the three breads on it, so if that's what you liked, this is where they came from
