A northern classic. Crisp wonton cups, local sausage, house ranch.
If you've had these at a party in Northern Ontario, you already know. If you haven't, here's the short version: a wonton wrapper pressed into a cup, filled with seasoned ground pork, cheese and our house made ranch, baked until the edges go crisp and golden.

What's in each one
- A wonton cup — pressed into shape and baked until crisp. This is what makes it a star, and it's also what makes it a one-handed appetizer.
- House ground pork
- Cheese — melted through the filling, and the reason these hold together in your hand
- House-made ranch
- Baked to order and served warm
Why they work
- Warm appetizers are hard to cater. Most of them go soggy, dry out or arrive cold. These are built in a cup for a reason — the wonton holds its shape and its crunch far better than pastry or bread, so they still eat properly twenty minutes after they leave the kitchen.
- One bite, one hand. No plate, no fork, no cutlery to chase at the end of the night.
- They're the one that gets talked about. Sausage, cheese and ranch in a crisp shell is a combination that works on everybody, and it's the tray that empties first.
- Two local sausages instead of one. The bacon green pepper and honey garlic play off each other — smoky and savoury against a little sweetness — which is why these taste like more than the sum of their parts.
Why the name
Wonton wrappers pressed into a cup splay open as they bake and end up looking like stars. That's the whole story, and it's why this shape is a classic rather than a gimmick.
