Sweet and Spicy Thai Chicken Bites (15 Piece)

A lot of catering skewers are an afterthought — chicken threaded onto a stick and left to dry out under a heat lamp. These aren't that. Every skewer is marinated chicken thigh, cooked so it stays juicy, and finished with the sweet and spicy Thai sauce we make in house.

Why chicken thigh, not breast

We used to make these with breast. We changed to thigh, for one reason: it holds. Thigh has more fat running through it, so a skewer that's been sitting on a tray for twenty minutes is still moist when somebody picks it up. Breast goes tight and dry the moment it stops being hot — which is exactly what you don't want from a warm appetizer at a party.

What's on each skewer

• Marinated chicken thigh, cubed and threaded on a bamboo pick
• Our house sweet and spicy Thai sauce — the same sauce that runs through our Thai chicken rice bowl and our duck wings. Sweet first, then the heat arrives.
• Green onion — chopped fresh over the top
• Toasted sesame seeds — for the finish

Why they work at a party

• One hand, one bite, no cutlery. A skewer is the most forgiving appetizer format there is — no plate needed, nothing to balance, nothing to clear - just a napkin.
• Warm food that holds. Thigh and a bamboo pick mean these still eat properly after a car journey, which is more than most hot appetizers can claim.
• They carry a signature. The Thai sauce is one of the flavors people come back to us for. This is the appetizer version of it.
• They look after themselves on a table. A tray of skewers is self-serve, self-explanatory and self-cleaning — nobody has to be asked to take one.
